FORT LAUDERDALE, Florida – Below is a list of places ordered closed last week by Florida Department of Business and Professional Regulation inspectors.
According to a file search, no locations were closed in the past week in Miami-Dade or Monroe counties.
All the places mentioned have been authorized to reopen following an orderly cleaning and re-inspection.

“Rodent activity present as evidenced by rodent droppings found. 1. Observed 9 rodent droppings on the floor behind the mixer in the kitchen preparation area. 2. Observed 10 rodent droppings in the lower shelf of the preparation table next to the mixer. The shelf stores buckets of flour, sugar and caramel milk. 3. Observed 8 rodent droppings along the plinth in the back corridor of the establishment towards the back exit. The hallway is a storage area for pizza boxes and loose chickpea flour.
“Raw animal feed is not properly separated from each other in the holding unit according to the minimum cooking temperature required. Observed in the small hinged-lid cooler, raw chicken kept on top of raw beef sausage. The employee moved the chicken to alternate refrigeration for proper storage.
“Time / temperature control for food safety when cold maintained above 41 degrees Fahrenheit.” Observed in the small flip top cooler; chicken (45 – Keep cold). The item was stored above the cooler cooler line and had been in the cooler for 30 minutes. The manager placed the item in alternate refrigeration for rapid cooling.

Small flying insects live in the kitchen, food preparation area, food storage area and / or bar. Main Kitchen – Office – observed 10 live flying insects flying around the office. -Ice Machine Prep Station- observed 4 flying insects living inside and landing on red onions. – outside the bar – observed 7 live flying insects flying around the sink and liquor bottles. -inside the bar- observed 1 live flying insect hovering over the ice machine and 4 live flying insects flying inside the container and landing on webs. -dry storage room- observed approximately 20 live flying insects flying and landing on boxes in the dry storage room. – grill prep station – I observed that I saw a flying insect hovering over the grill. – counter cooler for the preparation of the cooking line – observation of a living flying insect flying over the marinara sauce. “
“No written procedure available for using time as a public health control to maintain time / temperature control for food safety. Grill station in the main kitchen – the béarnaise and hollandaise sauce observed are kept at room temperature over 11 times. The operator said he did not have a written plan.

“Cockroach activity present as evidenced by live cockroaches found. Observed about 25 to 30 live cockroaches on the wall and loose wall covering on the left side of the ice maker in the kitchen. Observed 1 live roach in dry storage containers on a handy small freezer in the kitchen.
“Dead cockroaches on the scene. Observed 5 dead cockroaches next to the water heater under the dishwasher, 3 dead cockroaches within easy reach in the freezer and 4 dead cockroaches next to the ice maker.
“The employee did not wash his hands before putting on gloves to start a work task with food. The observed cook handles soiled equipment and puts on gloves when preparing food. Discussed with the owner. The employee washed his hands and put on new gloves.
“The chlorine disinfectant for the dishwasher is not at the correct minimum strength. Stop using the dishwasher for sanitizing and set up manual sanitizing until the dishwasher is serviced and sanitized properly. Dishwasher tested 3 times at 0 ppm. The disinfectant is not connected to the dishwasher.
“There is a build-up of black substance / grease / food debris inside the oven / microwave. 2 microwave with a large amount of soiled food residue. ** Repeat violation **. “

“Cockroach activity present as evidenced by live cockroaches found. 1 live cockroach observed in employee / customer bathroom. 3 live cockroaches observed inside a pot stored under a prep table in the kitchen. Operator killed and pot clean. 1 live roach observed crawling on the water heater located inside the kitchen. 1 live cockroach observed crawling on a personal purse stored on a shelf next to take-out containers in the kitchen. Operator killed and area cleaned up.
“Poisonous substance / improperly stored chemical.” Observed white paint / cockroach killer spray stored on a shelf under the prep table in the kitchen next to the cooking oil and onions.
“Clean utensils or equipment stored in a dirty drawer or rack. Kitchen utensils observed stored in dirty container. The operator removed the utensils and placed them for washing.
“There is a build-up of black substance / grease / food debris inside the oven / microwave. I observed a broken down deep fryer with a heavy buildup of fat in the kitchen.
“Raw animal feed is not properly separated from each other in the holding unit according to the minimum cooking temperature required. Raw beef store seen above shrimp and veg inside the kitchen chest freezer. Appropriate examination of the storage of raw materials. ** Repeat violation **. “
